Apples, Apples, Apples

What a day.

Fresh apples coming out of our ears thanks to a friend.

The baking geniuses came together to make apple bread and apple/carrot/bran flax muffins. Both incredible, and really a nice balance of healthy and not-so-healthy baked goods 😉

All the while, Apple cider pork loin was simmering away in the slow cooker. The indian summer breezes were blowing, and the kids where playing happily all around us.

Sounds idyllic. The cleanup was not so.

Pork Loin in Apple Cider, with Apple Compote (if you really want to go crazy with it)

Take a pork chop, brown in a pan, and throw it into a slow cooker.

Apple cider

Djion mustard

Cinnamon sticks: 1 or 2

Bay leaves

maple syrup

Cider vinegar

Whatever else sounds good with that panoply of scents and textures.

Serve with squash or sweet potato fries for a fall meal that melts in your mouth.

Apple Compote is adapted from Food and Wine magazine–but without the homemade bitters-because I didn’t make those 2.5 weeks in advance.

Whoops. Apple Compote didn’t happen.
