Comfort Food for a Crowd

Yes indeed, roast chicken and buttermilk biscuits, perfect for a chilly March evening sitting around with friends, new and old.

The alternate title for this post could be: Life is too short to count calories…

The roast chicken is insanely easy; and a great price point for feeding a bunch (TJs for about a dollar a pound).

Butter a casserole dish, or use a roasting pan.

Chop red potatoes and line the bottom of the pan with potatoes, garlic cloves peeled and cut in half, and carrots or any other veggies that sound good.

Most recipes recommend putting white wine in with the chicken; I used a nice flavorful lager.

Stuff chicken with sage, thyme, rosemary, etc. I threw in some celery too for good measure.

Rub with butter and sprinkle lemon juice all over.

Heat oven to 350. Expect roughly an hour cooking time for a 4lb chicken, but use the meat thermometer to get it right.
