Ham with Plum Sauce / Asparagus / Potatoes

Accompanying salad with artichoke, goat cheese and baby yellow tomatoes

Our take on the traditional holiday ham dinner, with a plum sauce invented by my creative husband (and made reality by yours truly).

Menu:

Ham (Honey baked)

Asparagus, saute’d with spices in oil

Roasted potatoes–with sea salt and a special pepper like TJ’s flower pepper

Side salad (see picture)

Plum sauce for the Ham (recipe below)

3-5 fresh plums–chopped

half a mango-chopped

zest of one orange (or slightly less than one orange)

raw sugar (to taste)

Our plums were fairly tart so just add sugar based on what you are dealing with. Simmer plums in a pan, adding other ingredients and cooking on low for 20 minutes at least, or until the fruit has broken down sufficiently to form a nice glaze/sauce. Mmmm. Definitely will do that again with ham.
